What's In your Lunch??

Well, this is what is in my lunch for morning snack this week.  Again, cursed banana boomerangs fell out of the freezer on Sunday nearly crushing my foot - time to bake.  Oh, then there's that basket of strawberries in the fridge that some of us are to "delicate" to eat, put them in with the bananas and make:

Strawberry Banana Muffins
Mix together:
1/2 cup canola oil
2 eggs
3/4 cup brown sugar 
1 teaspoon vanilla
Add in: 

2 large ripe bananas (thaw the frozen boomerangs in microwave first)
1 cup strawberries chopped into small pieces
Final Addition:
1 1/4 cups flour
1 cup whole wheat flour 
3 tablespoons ground flax seed
1 1/2 teaspoons baking powder

1/4 teaspoon baking soda
1 teaspoon (4 grams) ground cinnamon
Bake at 350 degrees for 20 minutes.  Enjoy!
