If you follow my blog at all (now who doesn't) you will remember that last November I cooked and froze a whole pumpkin for purposes of muffin making. Last evening that is what I did, and here are the results. They turned out delicious (sorry about the pictures - lighting is odd at midnight).
Pumpkin Muffins
1/2 cup canola oil
1/2 cup white sugar
1/2 cup brown sugar
2 eggs
1/4 cup buttermilk
1 cup mashed cooked pumpkin
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp allspice
1/4 tsp cloves
1 cup white flour
1/2 cup whole wheat flour
1/3 cup ground flax seed
1 cup chocolate chips
Mix ingredients together in order listed. Bake at 350 degrees Fahrenheit for 25 minutes.
