What's in Your Lunch????

This week has marked the back to routine for both my son and I.  I went back to work he started summer camp at his most favorite place on this planet, and so now we need to have healthy things for lunch.
I made these blueberry muffins last night from a cookbook called Great Coffee Cakes, Sticky Buns, Muffins & More that I found at the St. Albert Public Library (I LOVE that place in case you did not already know that).
I omitted the streusel topping because in my cupboard I had some Cinna-Cream Sprinkles that I figured would do likely the same thing (and also justify why they are taking up space in my cupboard).
The end result:
Delicious!!!

What's In Your Lunch????

Ch-Ch-Ch-Chia, Blueberry Muffins of course (You're singing the song aren't you?).
My son and I made these today for lunches this week.

Chia Bluberry Muffins
6 Tbsp canola oil
3/4 cup sugar
2 eggs slightly beaten
1 1/2 cups buttermilk
1 1/2 tsps baking powder
1 1/2 tsps vanilla
3 cups flour
1 1/2 cups blueberries (lightly coated with flour)
2 heaping tablespoons ground flax seed
1 heaping tablespoon Chia seed
 
Mix ingredients together in order listed.  Bake at 350F for 20 minutes.

Oh S"crap"! It's Monday...

Well, it's that time of week again, time to use up some scraps!
Of course last night it was also time to make muffins for lunches so I got out my Mostly Muffins cook book and made the Basic Oatmeal Muffins.
However, there was this bag of left over wild blueberries sitting ever close to the precipice of the refrigerator freezer and rather than have a casualty with my accident prone brother I added the blueberries to the muffin batch.
Fresh from the oven, these muffins taste just like a bowl of warm oatmeal!

Oh S"crap"! It's Monday

Alright, so it's Monday, and I am crafting with food again for Oh S"crap" It's Monday!
Last night I had to make muffins for lunch this week and so I used 3 bananas from the freezer and my Banana Chocolate Chip muffin recipe, except that instead of chocolate chips I used the last of the blueberries hiding in the crisper!
Quite tasty I have to admit.

Blueberry Muffins

I discovered a bag of blueberries at the bottom of the freezer today, decided it was time to use them!
I made blueberry muffins, this is one of my favorite Blueberry Muffin recipes:

Blueberry Muffins:
1/2 cup canola oil
3/4 cup sugar
2 eggs
1 tsp vanilla
1/2 cup milk
1/4 tsp nutmeg
1 1/2 tsp baking powder
1 cup whole wheat flour
1 cup all purpose flour
3 tbsp. ground flax seed
2 cups frozen blueberries

1/4 cup Decorator sugar 
Mix wet ingredients in order listed.  Add in dry ingredients, then fold in blueberries.  Sprinkle decorator sugar over muffins in pan.
Bake at 350 degrees Fahrenheit for 20 minutes.
