What's For Dinner? Summer Vacation Day 60!

Today was a Day of Random for my son and I.
We started out having a plan for the day, but so many things got in our way that we will try again tomorrow.
We went for lunch at The Dish Bistro as I still had some coupons for there.
Then we went to Cookie Love.  Of course we got a bag of cookies, but we also got made just for us Ice Cream Sandwiches.  Ice cream sandwiches this good deserved a park, so we walked over quickly to Paul Kane Park.  It is such a pretty little park in the middle of the city.
A quick stop at the shoe store and day was over.
Hmmmmm, now what about dinner.
My dietitian colleague gave me a spaghetti squash last week, so that seemed like the start for dinner.
Here is what I ended up with:
The squash was cut in half and the seeds cleaned out then rubbed with Chipotle flavored Olive Oil (Evoolution Edmonton).
Baked at 350F for about a half hour.
The squash was then stuffed with sauteed:
* onions
* yellow pepper
* fresh mushrooms
* frozen niblet corn
* can of tomato sauce
I topped both halves of the squash with mozzarella cheese and fried onions and baked until the cheese had melted.

Yummy!

What's For Dinner???

If you remember my son and I went to the market garden last week and stocked up on a whole bunch of vegetables, one of which was swisschard!
Now, have you ever tried to get a child to eat this stuff (really, I can barely tolerate it, it has a gross look and texture to it, but I know it is REALLY healthy, so I eat it)?
So....it has become like a zucchini product in our house.  What can't I hide it in?
Hence, dinner last night:

 Lasagna Rolls with swisschard inside them!
These were really easy to make:
12 lasagna noodles (I put them in the casserole dish with boiling water and they were soft by the time I was ready to roll them
1 large (4 cup I guess) package of creamed cottage cheese
1 egg
1 large bunch of swisschard chopped small
4 fresh mushrooms chopped
2 green onions chopped
1 branch of fresh dill chopped
salt and pepper to taste
-I mixed all of these together, then spread across the lasagna noodle and rolled up.
- Once all 12 noodles were in the casserole dish, I covered the rolls in pasta sauce, and grated cheese found in the refrigerator.

These turned out very tasty and I will experiment more with these creations!

What's for Breakfast???

So, apparently my son is tired of oatmeal for breakfast!  This morning he asked not to have it.  When I asked him what he wanted he reminded me of these things.
I have no idea what they are called, they are something that he ate at a restaurant in the honestly the middle of nowhere Arizona or New Mexico one day when we were on vacation down there and it was too hot to cook breakfast in the camper trailer.
They are basically two tortilla's with a layer of grated cheese between them, and a cut out for the fried egg.  
Fry in your frying pan, and serve with salsa, avocado, and a glass of milk and you have a complete breakfast!

What's For Dinner?

Spaghetti, or whatever this long curly stringy pasta is (looks your hair my son told me).
Last evening I was going to an event at our local gardening center and since I live in Alberta where dad's are frequently away at work, my son had to accompany me to this event, and that meant dinner before I could leave.
While the noodles boiled, I stir fried in canola oil an onion, some celery and a red and yellow pepper, added a can of Vege-Burger, and a jar of pasta sauce.  Once heated through some Parmesan cheese and a glass of milk, spinach salad and dinner was served.  Eat the apple in the car on route!

Quinoa Burgers

I bought a really big bag of Quinoa at Costco recently.
What to do with it?  Make burgers!
For dinner last night we had Quinoa burgers with Tzatziki Sauce, and a pepper/cucumber salad.
I think it was delicious!
Here's how to make Quinoa Burgers:

2 cups of cooked Quinoa
3 eggs,
1/2 cup cottage cheese
1 cup shredded cheese
green onion chopped
1 small shredded carrot
1 tbsp ground flax seeds
3 tbsp flour
1 tbsp sugar
salt/pepper/garlic powder to taste

Mix all ingredients together.  Drop by ice cream scoop into hot frying pan with 1 tbsp canola oil.  Cook for about 5 minutes on each side on medium heat.
Serve with Tzatziki Sauce and enjoy!

What's For Dinner???

Chili!
Last night this timeless question was asked at our house.  I defaulted to my quick dinner solution, Vegetarian Chili.
Here is the quick and very easy recipe:

Vegetarian Chili
1 small onion
1 medium carrot
- chop onion and grate carrot, saute in small amount of non-hydrogenated margarine over medium heat
- add:
1 jar pasta sauce
1 can corn niblets
1 can kidney beans
small chopped green peppers (green and red work nicely)
- heat until warmed through 
- add:
1 tbsp taco seasoning
1 tbsp chili powder
- heat until warmed through

Serve with salsa, sour cream, grated cheese and tortilla chips.  A very hearty dinner for this time of year.
