Let's Roll...

Good Evening Internet Friends!

Super busy day today so up early to "Roll".

Took the SUV in to Sherwood Park Toyota for a fall tune up and winter tire for all season swap out.

My Bubble Friend picked me up so that I did not have to take the shuttle home.

We stopped for a London Fog and Chocolate Pretzel at Paramo Cafe.  We had a lovely visit out on the patio.

Next up was the Bone & Biscuit where we shopped leisurely and found a few thing that each of us "NEEDED" for our dogs.

Stopped in the for the grand opening of the new hair salon in the village.  

This afternoon I spent time in my kitchen.  

First off I used up one of the three bags of fresh applies I have been gifted.  One plastic grocery bag made 5 bags of apple pie filling.  One of which I used in a Strawberry Apple Crisp for dinner:


Tomorrow I will try and get through the other two grocery bags of apples that I still have.

After the apples I movd on to one of the three pumpkins I have.  As of this evening I have 22 cups of mashed pumpkin for baking and Lentil Pumpkin Chilli.  

The first pumpkin I used up was quite big and did not fit well in the oven whole.  As such I did cut it in half to bake.  That meant I needed to clean out the inside.  Did not want to waste the seeds so I roasted them in EVOOLUTION garlic oil and seasoned with Alpine Touch Seasoning:
 

These turned out really tasty.

Took doggie for a long walk this evening after dinner.  Was going to work on the binding of my quilt but apparently it has become a nest for the cat!!!

It's Back to Work I Go...

Good Evening Internet Friends!

Crazy busy day here in Kathyland again as tomorrow is back to work and school.  Kiddo will get a few breaks with semester break, PD days and non instructional days but for the next three months.....I work.

Did lots of cooking/baking/food prep today:

First up....this awesome salad that I used fresh veggies from the refrigerator to make.  Salad dressing is a recipe that I found in the latest edition of Costco Connection.  All veggies except for the green onion are from Costco.  My friends and family all know my mantra..."If you can't buy it at Costco - do you really need it?"

Then it was on to a batch of Rotten Banana Bread as my brother refers to it.  I will only eat bananas just as the green starts to turn yellow.  Any yellow or brown on the banana means it is "rotten" to me and needs to be made into muffins or bread:

For dinner I made a Shepherd's pie with more veggies from the freezer and a package of lean farm ground beef.  Used sweet potatoes for the topping:

For dessert I made an apple crisp using the frozen apple pie filling that I stashed away in the freezer last fall 🍎:

SOOOOOO Yummy.

In addition to housework, laundry, clearing snow off the deck and walking the doggie I did manage a bit of SEW time:

Knock, Knock. Who' There?

It's ME!!!
Good Evening Internet Friends!
It has been an entire week since my last post!
Got home from vacation, got my son ready for school, then his three day camping trip with school, and attended ACLS certification for the past two days!
I celebrated passing by crafting this evening:
Since my brain is "mush" right now, and I don't think I could "save" anyone at present, I decided to use the Mojo-Monday 361 sketch.
I used all Stampin' Up,  albeit expired, product (shame on me...).
After the week I have had this was a good break, although a little too complex to do right now.
Off to bed now, as lots of house work, baking and cooking to get caught up on over this coming weekend.

Apple Muffins

On the way home from taking my son skiing we detoured around Edmonton on the Henday and stopped in St. Albert at the library.  I LOVE the library there.  I had reserved a few books, but on my way in I found what appears to be the brand new Best of Bridge Cookbooks Volume 3!  I grabbed that and headed for the checkout.
When I got home between loads of laundry I started to peruse through this treasure and discovered a recipe for Apple Cheddar Muffins.
So, I made these for our lunches tomorrow:
 I did stop for some groceries on the way home, and when I went to check that all the bags were unpacked I came across an item that must have been a last minute sales item:
Well, I guess it's his bag now, not going to use that for groceries....
