If you follow my blog ramblings you will know that I am what my husband refers to as Saskatchewan Ukrainian cheap! I prefer to think of it as being resourceful, and more of a waste not want not philosophy.
After making pyrohy yesterday there was some left over potato and cheese mixture. What to do with it?

I omitted the bacon, and the cottage cheese as the mashed potato was already full of cheddar cheese:

It was quite delicious!
